Creamy Parmesan Chicken

Ingredients:

2 lbs Boneless/Skinless Chicken Breast
1 tsp Coarse Salt
Fresh Ground Black Pepper to taste
2 Tbs Olive Oil - can substitute unsalted butter if desired
¼ Cup Chicken Broth
1 Cup Heavy Cream - can substitute half & half is desired
1 Cup Parmesan Cheese - grated
1 Medium Tomato - seeded and chopped
1 Cup Fresh Spinach (OPTIONAL)
3 Tbs Fresh Italian Parsley - chopped

Preparation:
  1. Season the chicken with the salt and pepper and allow to sit at room temperature for 5-10 minutes - Heat oil/butter in a medium/large skillet over medium-high heat until shimmering - Once the oil/butter is hot, add the seasoned chicken and allow to cook 5-6 minutes to a side or until golden brown and cooked through
  2. Reduce heat to medium-low
  3. Transfer the chicken to a clean plate until needed
  4. Add the Triple Threat Garlic Seasoning to the skillet and sauté for 30 seconds - Add the chicken broth to deglaze the pan (making sure to gently scrape the bottom to get up all the fond) - Add the cream/half & half and thoroughly combine - Stir in the parmesan cheese making sure that it is completely melted and combined
  5. Allow to simmer for 2-5 minutes or until thickened - Add the spinach (IF USING) and allow to simmer (stirring frequently) for 2-3 minutes until wilted
  6. Chop the chicken into bite sized pieces and return to the pan - Add the tomato and parsley and allow to simmer (stirring frequently) for 2-3 minutes more
  7. Serve hot over noodles, rice, or smashed potatoes with a good ‘hunk’ of crusty bread a fresh garden salad, and some steamed vegetables if desired
