Tamatar ke Raita
Tomato Yogurt Dip/Condiment

Ingredients:
2 Cups Plain Yogurt (Dahi)
3 Roma Tomatoes (Tamatar) - seeded and small diced
1 Fresh Green Chile (Hari Mirch) - seeded and minced
2 Tbs Fresh Coriander Leaves (Dhania Patta)* - fine chopped
½ tsp Cumin Powder (Jeera Podi)
½ tsp Coriander Powder (Dhania Podi)
¼ tsp Black Salt (Kala Namak)** - or to taste
-OPTIONAL-
1 clove Fresh Garlic (Leh-sun) - grated into a paste
¼ inch piece Fresh Ginger (Adrak) - grated into a paste
Preparation:
- Place yogurt in a medium/large nonreactive mixing bowl and whisk until smooth
- Add the cumin and coriander powder and whisk to thoroughly combine
- Add the garlic and ginger paste (if using) and whisk to thoroughly combine
- Gently fold in the tomato, green chile, and coriander leaves until thoroughly combined
- Cover and chill in refrigerator for 30-60 minutes to allow flavors to meld
- Serve alongside biryani or pulao, with bread as a snack, over steamed basmati rice, or as part of any Indian meal

Can substitute 2 Tbs Fresh Mint Leaves (Pudina Patta)

Can be stored refrigerated in an airtight container for up to 1 week
