Smashed Sweet Potatoes

Ingredients:
2 ½ lbs Sweet Potatoes - peeled and cut into 1 inch 'cubes'
¾ Cup Heavy Cream - can substitute half and half or whole milk if desired
4 Tbs Salted Butter
2 Tbs Grade A Pure Maple Syrup
Kosher Salt to taste
Fresh ground Black Pepper to taste
-OPTIONAL GARNISH-
¼ Cup Candied -OR- Roasted Pecans - small chopped
Additional Salted Butter
Preparation:
Place the cubed sweet potato in a large pot and add enough water to cover by at least 2 inches
Season generously with salt (water should taste almost like sea water)
Place over medium-high heat and bring to a boil - Once a boil has been achieved, allow to cook until fork tender (apx 25 minutes)
Drain the sweet potatoes thoroughly and transfer to a large bowl
Add the heavy cream, butter, and maple syrup - Using a potato masher, smash into a smooth mash
Adjust seasoning with salt and fresh ground pepper to taste
Transfer to a serving dish - Garnish with the optional candied/roasted pecans and additional butter (if desired) - Serve hot
