Single Skillet Balsamic Glazed Chicken and Asparagus

Ingredients:
2 lbs Chicken Tenderloins
1 lb Fresh Asparagus Spears
1 Cup Grape Tomatoes - halved
1 Large Carrot - peeled and julienned
2 Tbs Extra Virgin Olive Oil
Kosher Salt to taste
Fresh Ground Black Pepper to taste
Sauce:
1 Small Clove Fresh Garlic - finely minced
6 Tbs Balsamic Vinegar
3 Tbs Extra Virgin Olive Oil
1 ½ Tbs Honey
4 tsp Red Wine Vinegar
1 ½ tsp Water
⅛ tsp Dried Oregano
⅛ tsp Dried Basil
⅛ tsp Dried Thyme
⅛ tsp Onion Powder
⅛ tsp Red Pepper Flakes
Preparation:
In a medium bowl, whisk together all of the 'sauce' ingredients - Set aside until needed
Snap off the bottom inch or so of the asparagus spears (the stems will naturally break where the tough woody stem ends, and the tender stem begins) and set aside until needed - NOTE: You can discard the 'woody' sections OR save them for making soup stock
Season the chicken on all sides with salt and pepper to taste
Heat oil in a large skillet over medium-high heat until shimmering - Add the seasoned chicken to the pan in a single layer
Allow chicken to cook undisturbed for 3 minutes - Flip and again allow to cook undisturbed for 3 minutes - Cook until the chicken is nicely seared on both sides and cooked through
Add about half of the sauce to the skillet and thoroughly coat the chicken turning as needed - Transfer chicken to a large plate leaving any sauce in the skillet - Set aside until needed
Return skillet to heat and add the asparagus and carrot - Season with salt and pepper to taste
Allow to cook (stirring frequently) until asparagus is 'tender crisp' (apx 4-5 minutes) - Transfer to the plate with the chicken and set aside until needed
Return skillet to heat and add the remaining sauce - Allow to cook (stirring constantly) until thickened (apx 1-2 minutes)
Remove from heat and return the chicken, asparagus, and carrot to the skillet -Add the halved tomatoes and toss everything to coat with the thickened sauce
Serve immediately with side of choice (Rice, Pasta, Smashed Potatoes, and/or Crusty Bread are some of my favorites)
