Ingredients:
2 lbs Ripe Tomatoes - cored and chopped
2 Tbs Olive Oil
1 Medium Red or White Onion - finely diced
1 Large Clove Fresh Garlic - minced or grated into a paste
1 Cup Red Wine Vinegar
½ Cup Light Brown Sugar
½ Cup Water
1 tsp Fresh Thyme Leaves - finely chopped
1 tsp Kosher Salt
1 tsp Fresh Ground Black Pepper
Preparation:
- Heat olive oil in a large saucepan or pot over medium heat
- Add, tomatoes, onions, and garlic - Cook until onions are soft and slightly translucent or pink in color if using red (apx 5 - 7 minutes)
- Add sugar, vinegar, water, thyme, salt, and pepper and bring to a boil
- Reduce heat to a simmer - Cover and allow to simmer for 30 minutes stirring occasionally
- After 30 minutes, remove cover and continue to simmer until mixture is reduced to your desired thickness - At the bare minimum, the mixture should be the consistency of a thin jam - While reducing, don’t overdo it, mixture will continue to thicken as it cools
- Remove from heat and ladle mixture into sterilized mason jars and process for 15 minutes in a water bath -OR- allow to cool and place in an airtight container and keep refrigerated for up to 2 weeks
Use this Savory Tomato Jam as an alternative to ketchup, use it to top bruschetta or other breads, it pairs excellent with cheese on a cheese plate, and can be added to any sandwich (I highly recommend adding it to a classic BLT for a deeper, richer, tomato flavor), or used for whatever your heart desires!
