Submitted By: Sarah P.
Ingredients:
12-16 oz Cranberries - fresh or frozen
1 Cup Granulated Sugar
1 Cup Cranberry Juice
1 Tbs Fresh Grated Orange Zest
Kosher Salt to taste
Preparation:
- Place ½ cup of the cranberries in a small bowl and set aside until needed
- Place the remaining cranberries, sugar, cranberry juice, and orange zest in a small/medium pan and set over low heat
- Allow to cook (stirring occasionally) until the sugar has dissolved and the cranberries are nice and soft (apx 10 minutes)
- Increase heat to medium and continue to cook (stirring frequently) until the cranberries burst (apx 12 minutes more)
- Reduce heat to low - Add the reserved ½ cup of cranberries and stir to combine
- Adjust seasoning with kosher salt an additional sugar if needed - Allow to cook for 3-5 minutes to just barely soften the reserved cranberries
- Transfer to a serving dish and allow to cool to room temperature before serving or served chilled
