1 ½ lbs Cremini (AKA Baby Bella) Mushrooms - cleaned
3 cloves Fresh Garlic - minced fine
1 Green Onion (White part only) - mined fine
¼ Cup Unsalted Butter - melted
1 Tbs Extra Virgin Olive Oil
1 tsp Balsamic Vinegar
1 tsp Fresh Thyme Leaves - chopped fine
2 tsp Fresh Parsley - chopped fine
Kosher Salt to taste
Fresh Ground Black Pepper to taste
Preparation:
Preheat oven to 375ºF
Line a large baking sheet with parchment paper
In a large mixing bowl, whisk together the garlic, green onion, melted butter, olive oil, balsamic vinegar, honey, thyme, and parsley until thoroughly combined - Season with salt and pepper to taste
Cut a bit off the ends of the stems of the mushrooms with a sharp paring knife and add to the above mixture - Toss to thoroughly coat
Transfer the mushrooms to the prepared baking sheet and spread into a single layer stem side up - Drizzle any remaining butter mixture over the top of the mushrooms
Bake in the center of the oven until golden and tender (apx 15-20 minutes)
Transfer to a serving dish - Lightly drizzle with additional balsamic vinegar, garnish with some finely chopped fresh parsley if desired and serve hot
