Ingredients:
1 lb (apx ½ Medium Head) Green Cabbage - finely shredded
⅓ Cup Flat Leaf Parsley - chopped
3 cloves Fresh Garlic - minced
1 Bunch Green Onions - chopped
¼ Cup Extra Virgin Olive Oil
1 tsp Fresh Mint - minced
¾ tsp Granulated Sugar
½ tsp Kosher Salt
½ tsp Cumin Powder
½ tsp Ground Allspice
¼ tsp Fresh Ground Black Pepper
Juice of 1 Lemon
Preparation:
- Place the garlic in a mortar and pestle along with the salt and pound until 'creamy' - Transfer to a large bowl
- Add the olive oil, sugar, cumin, allspice, pepper, and lemon juice and whisk together until smooth - Add the mint and mix to thoroughly combine
- Fold in cabbage, parsley, and green onion and toss until completely coated - Adjust seasoning
- Cover and chill in refrigerator for at least 10 minutes (up to 30 minutes) for flavors to meld
- Serve slightly chilled or at room temperature
