Preparation:
- Heat coconut oil in a large pan, wok, or kadahi with a tight fitting lid over medium heat until shimmering - Once oil is hot, add mustard reeds and fry for 30 seconds
- Add onion and sauté until soft and translucent (apx 6 minutes) - Add curry leaves and continue to sauté until onions are light brown (apx 6-7 minutes more)
- Add garlic and ginger and continue to sauté for 1-2 minutes
- Add just enough water to cover the onions - Cover with lid and allow to cook for 1-2 minutes - Remove lid and sauté until 'dry' (apx 3 minutes) - Add coriander, turmeric, and Kashmiri chile powder and continue to sauté for 1 minute
- Add tomato, salt to taste (apx 1 tsp), and enough water to cover the mixture by about ½ inch - Cover with lid and bring to a boil - Reduce heat to a simmer and allow to simmer for 4-6 minutes until slightly thickened (consistency should be like thick soup - not watery like broth) - Add sugar (and green chile if using) and continue to simmer for 1 minute
- Add kerala garam masala (if using) and thoroughly combine
- Serve hot alongside parotta, chapatti, naan, pulao, or steamed rice or even paired with Thattu Kori (Kerala Street Stall Chicken Fry) for an incredible meal
