Indian Glazed Carrots

Ingredients:
2 lbs Carrots (
Gajar
) - peeled and thinly sliced on the diagonal
1 clove Fresh Garlic (
Leh-sun
) - grated into a paste
¼ inch piece Fresh Ginger (
Adrak
) - grated into a paste
1 ½ Cups Vegetable stock - can substitute plain water
2 Tbs Jaggery (
Gur
) - grated
2 tsp Ghee
1 tsp Ground Cumin (
Jeera
)
Pinch of Kosher Salt (
Namak
)
Fresh Ground Black Pepper (
Kali Mirch
) - to taste
Preparation:
Heat ghee in a large skillet over medium heat
Once ghee is hot, add garlic and ginger and sauté for 1 minute
Add ground cumin and sauté for an additional 30 seconds
Add carrots, jaggery, vegetable stock/water, and salt to pan
Allow to cook (stirring regularly) for 20-25 minutes or until carrots are tender, all liquid is absorbed, and carrots are glazed
Serve hot garnished with fresh ground black pepper
