3 lbs Baby Potatoes - quartered (peeled or not - your choice)
2 Tbs Extra Virgin Olive Oil
2 tsp Ground Cumin
2 tsp Ground Coriander
2 tsp Garam Masala
1 tsp Whole Cumin Seeds
¼ tsp Turmeric Powder
1 Cup Plain Yogurt
3-4 Large cloves Fresh Garlic - grated into a paste
¼ inch piece Fresh Ginger - grated into a paste
Juice of 1 Lemon
Kosher Salt to taste

Fresh Coriander (Cilantro) Leaves - rough chopped
Preparation:
Preheat oven to 375ºF
Toss potatoes with olive oil and transfer to lined baking sheet - Place in top third of the oven and roast until golden brown (apx 45 minutes) - Transfer to a large bowl
Place a small skillet over medium heat - Add ground cumin, ground coriander, garam masala, cumin seeds, and turmeric - Dry roast until fragrant (apx 1-2 minutes)
In a large bowl, whisk together the yogurt, roasted spices, garlic, ginger, lemon juice, and salt to taste (apx 1 tsp) until smooth and thoroughly combined
Add potatoes and toss to coat - Taste and adjust seasoning
Sprinkle with chopped coriander leaves (if using) and serve warm -OR- cover and chill in refrigerator and serve cold
