1 lb Parsnips - peeled and quartered lengthwise into 'spears'
¼ Cup Dry Sherry
5 Tbs Honey
Kosher Salt to taste
Fresh Ground Black Pepper to taste

3 Tbs Pure Maple Syrup (reduce honey by 3 Tbs)
1 Tbs Fresh Thyme Leaves
Preparation:
Preheat oven to 400ºF
Bring a large pot of water to a boil over high heat - Add 2 tsp of salt to the water
Add the parsnip 'spears to the boiling water and allow to cook for 3 minutes
Drain the parsnips and set aside to dry for 5-7 minutes
In a large mixing bowl, whisk together the sherry, honey, salt and pepper to taste (apx ½ tsp salt and ¼ tsp pepper to start), maple syrup, and thyme (if using)
Add the parsnips to the mixing bowl and toss to coat
Transfer parsnips to a lightly greased baking tray - Drizzle with the remaining honey mixture
Place in the top third of the oven and allow to bake for 10 minutes
Turn the parsnips to ensure even browning (rotate the tray while at it)
Return to the oven and allow to bake until tender and golden brown on all sides (apx 10 minutes more
