Ingredients:
1 ½ lbs Carrots (Gajar) - peeled and grated
2 Cups Whole Milk (Doodh)
¾ Cup Granulated Sugar (Chini)
¼ tsp Fresh Ground Green Cardamom Powder (Choti Elaichi Podi)
3 Tbs Ghee
-OPTIONAL GARNISH-
Blanched, sliced Almonds (Badam)
Chopped Cashew Nuts (Kaju)
Golden Raisins (Kishmish)
Preparation:
Peel, wash, and grate carrots
Heat ghee over medium heat in a medium/large heavy bottomed pan, wok, or kadahi – Once ghee is hot, add grated carrot and sauté for 5-7 minutes or until tender and slightly darkened in color
Add milk and cardamom - Reduce heat to low and cook (stirring frequently) until milk is completely absorbed
Add sugar and continue to cook (stirring constantly) until sugar melts and thoroughly incorporates - Remove from heat and allow to sit for 2 minutes
Ready to garnished with optional items
Gajar Halwa can be served hot, warm, or at room temperature
If wanting to serve at room temp or store for later, spread on a lightly greased baking sheet apx ¾ of an inch thick and allow to cool completely – Cut into squares and serve -OR- place in airtight container(s)
Can be stored in airtight container in the refrigerator for up to 1 week or frozen for up to 2 months
