Ingredients:

½ lb Breakfast Sausage Meat - crumbled
1 lb Russet Potatoes
½ lb Thick Cut Bacon - diced
1 Tbs Tasmanian Spice Traders Allium Addiction Onion Seasoning
1 tsp Tasmanian Spice Traders Triple Threat Garlic Seasoning
6 Large Eggs - beaten
2 Cups Sharp Cheddar Cheese - shredded
1 ¼ Cups Cottage Cheese
1 Cup Asiago Cheese - shredded

Preparation:
  1. Preheat oven to 350°F (175°C)
  2. Place a large skillet over medium-high heat and add the breakfast sausage meat - Allow to cook (stirring and breaking up as necessary) until the sausage is nicely browned (apx 7-8 minutes) - Using a slotted spoon, transfer the cooked sausage to absorbent paper and set aside until needed
  3. While the Sausage is cooking, peel and grate your potatoes using the large holes of a box grater - Wrap the grated potatoes in absorbent paper and set aside until needed
  4. Drain off any grease from the skillet and return to heat - Add the diced bacon and allow to cook (stirring frequently) until crispy (apx 8-10 minutes) - Remove from heat and, using a slotted spoon, transfer the cooked bacon to absorbent paper until needed
  5. Drain off all but 1-2 Tablespoons of the bacon grease and add the Allium Addiction and Triple Threat seasoning to the skillet (OFF THE HEAT) and heat (stirring constantly) in the residual heat until super aromatic (apx 1-2 minutes
  6. Transfer the spice mixture to a large mixing bowl - Add the beaten eggs, cheddar, cottage cheese, and asiago – Mix until well combined
  7. Mix in the shredded potatoes, sausage meat, and crisp bacon until nicely distributed
  8. Transfer the mixture to a lightly buttered a 9X13 inch baking or casserole dish
  9. Bake, uncovered in the top third of the oven for 30-40 minutes or until a knife inserted into the center comes out clean
  10. Remove from oven and allow to stand for 10 minutes before slicing and serving as part of your favorite breakfast or brunch offerings
