- Place the dry ingredients in the work bowl of a food processor - Pulse 3-4 times to combine
- Add the butter and pulse 8-12 times until the flour resembles a coarse meal
- Add ½ Cup of cold water and pulse 4-5 times - Add water 1 Tbs at a time (pulsing 4-5 times each addition) until a shaggy dough is formed
- Scrape the dough out onto a lightly dusted counter or a cutting board - Knead until smooth (apx 3-5 minutes) - Cover with a clean towel and allow to rest for 15 minutes
- Roll out the dough to ⅛ inch thick - Use a pizza cutter, pastry wheel, or a sharp knife to cut the dough into 1 ½ inch squares then triangles - Transfer to the lined baking sheets leaving a slight gap on all sides of each ‘cracker’ - Use a fork to prick the top of each a couple of times

- Turn off the oven, crack oven door about 6 inches, and allow the crackers to sit in the warm oven for 30 minutes - Remove and allow to cool fully before serving or storing in an airtight container for up to 1 week
Dip:
- Place cream cheese, sour cream, lemon zest and juice in a large bowl and season with ½ tsp salt and ¼ tsp pepper - Use a hand mixer, to combine until smooth and creamy
- Add the remaining ingredients and stir until well distributed - Adjust seasoning with additional salt, pepper, and lemon juice as desired
- Cover and place in the refrigerator for a minimum 30 minutes to allow flavors to meld
- Serve chilled or at room temperature with crackers and/or veggies for dipping
