1 Cup Asiago Cheese - grated - you can substitute mozzarella if desired
¼ Cup Parmigiano-Reggiano - grated
Kosher Salt to taste
Fresh Ground Black Pepper to taste
Preparation:
Preheat oven to 400ºF
Snap off the bottom inch or so of the asparagus spears (the stems will naturally break where the tough woody stem ends and the tender stem begins) and set aside until needed - NOTE: You can discard the 'woody' sections OR save them for making soup stock
In a medium/Large mixing bowl, mix together the olive oil and garlic until well combined - Add the asparagus and toss to thoroughly coat
Line a baking sheet with aluminum foil and arrange the asparagus in a single layer and drizzle with any remaining oil/garlic - Generously season with salt and pepper to taste
Bake in the center of the oven until just tender (apx 10-12 minutes)
Switch oven to high broil
Spread the cheeses over the top of the asparagus
Place 6-8 inches under the broiler and allow to cook until the cheese is melted and golden and the asparagus is cooked to your liking (apx 4-6 minutes)
