Place the chopped bacon in a cold skillet and place over medium heat - Allow to cook (stirring frequently) until crispy (apx 7 minutes) - Using a slotted spoon, transfer to absorbent paper and allow to cool to room temperature
In a large bowl, place the cream cheese, sour cream, mayonnaise, ranch seasoning, and garlic - Thoroughly combine until smooth
Set aside a small handful of each of the cheddar, green onion, and cooked bacon for garnishing
Fold in the jalapeño (if using) along with the remaining cheddar, green onion, and bacon bits until evenly distributed
Sprinkle the reserved garnish over the top
Cover and chill in the refrigerator for a minimum of 2 hours (overnight for even better flavor)
Serve chilled OR bake in a 400ºF oven until 'bubbly' (apx 20 minutes) and serve hot
*1 (1 oz.) packet of store bought ranch seasoning / dressing mix is just fine
