Cheese and Bacon Ranch Dip
AKA 'Million Dollar Dip' and 'Crack Dip'

Ingredients:
½ lb Thick Cut Bacon (apx 6 strips) - small chopped
8 oz. Cream Cheese - softened
1 Cup Sour Cream
½ Cup Mayonnaise
2 Tbs Ranch Seasoning Mix* - homemade preferred
1 Clove Fresh Garlic - grated into a paste
2 Cups Extra Sharp Cheddar Cheese - grated
3 Green Onions - sliced thin

1 Jalapeño Pepper - Seeded and diced
Preparation:
- Place the chopped bacon in a cold skillet and place over medium heat - Allow to cook (stirring frequently) until crispy (apx 7 minutes) - Using a slotted spoon, transfer to absorbent paper and allow to cool to room temperature
- In a large bowl, place the cream cheese, sour cream, mayonnaise, ranch seasoning, and garlic - Thoroughly combine until smooth
- Set aside a small handful of each of the cheddar, green onion, and cooked bacon for garnishing
- Fold in the jalapeño (if using) along with the remaining cheddar, green onion, and bacon bits until evenly distributed
- Sprinkle the reserved garnish over the top
- Cover and chill in the refrigerator for a minimum of 2 hours (overnight for even better flavor)
- Serve chilled OR bake in a 400ºF oven until 'bubbly' (apx 20 minutes) and serve hot
*
1 (1 oz.) packet of store bought ranch seasoning / dressing mix is just fine
