Candied Yams
'Old School'

Ingredients:
3 ¼ lbs Sweet Potatoes (AKA Garnet Yams) - peeled and sliced into ½ - ¾ inch 'rounds'
1 Cup (2 Sticks) Butter
2 Cups Light Brown Sugar
1 tsp Ground Cinnamon
¼ tsp Ground Nutmeg
¼ tsp Ground Ginger
⅛ tsp Ground Cloves
1 Tbs Pure Vanilla Extract
Preparation:
- Melt butter over medium-high heat in a large skillet
- Place the sliced yams in a single layer in the skillet and allow to cook for 10 minutes - Flip and allow to cook for 10 minutes more
- Place all of the remaining ingredients into a small/medium bowl and whisk to thoroughly combine
- Reduce heat to medium
- Sprinkle the sugar mixture over the top of the yam slices
- Allow to cook (basting frequently with the pan juices) until yams are tender (apx 30 minutes)
- Transfer to a serving dish and pour the remaining sauce over the top
- Serve hot
