Ingredients:
3 ¼ lbs Sweet Potatoes (AKA Garnet Yams) - peeled and sliced into ½ - ¾ inch 'rounds'
1 Cup (2 Sticks) Butter
2 Cups Light Brown Sugar
1 tsp Ground Cinnamon
¼ tsp Ground Nutmeg
¼ tsp Ground Ginger
⅛ tsp Ground Cloves
1 Tbs Pure Vanilla Extract
Preparation:
Melt butter over medium-high heat in a large skillet
Place the sliced yams in a single layer in the skillet and allow to cook for 10 minutes - Flip and allow to cook for 10 minutes more
Place all of the remaining ingredients into a small/medium bowl and whisk to thoroughly combine
Reduce heat to medium
Sprinkle the sugar mixture over the top of the yam slices
Allow to cook (basting frequently with the pan juices) until yams are tender (apx 30 minutes)
Transfer to a serving dish and pour the remaining sauce over the top
Serve hot
