Fashioned after the dishes of North India, British curries share many of the same names and ingredients as the traditional dishes found in India but they are definitely simplified in terms of ingredients and cooking methods; in other words, Anglicized. They are still wonderful dishes but NOT Indian. This recipe is for a classic British style vegetable curry - the type made in households throughout England, Scotland, and Ireland...
Ingredients:
1 lb Frozen Mixed Vegetables*
1 Large Onion - chopped
3 cloves Fresh Garlic - crushed
1 14oz Can Chopped Tomatoes
2 Cups Vegetable Stock - can substitute plain water if desired
3 Tbs Curry Powder
3 Tbs Tomato Paste
1 Tbs Olive Oil
Kosher Salt and Fresh Ground Black Pepper to taste
-OPTIONAL GARNISH-
Fresh Coriander (Cilantro) - chopped
Preparation:
Heat olive oil in a large saucepan or skillet over medium-high heat until shimmering
Add onions and garlic - Sauté until golden in color (apx 8-10 minutes)
Add curry powder and tomato paste - Allow to cook (stirring constantly) for 3 minutes
Add mixed vegetables, tomatoes, stock/water, and salt and pepper to taste
Allow to cook for 20-30 minutes until vegetables are cooked through and tender
Adjust seasoning - Serve hot garnished with chopped coriander along with rice if desired
*You can use any mixture of vegetables you like but I suggest one that contains cauliflower
