Balsamic Roasted Carrots

Ingredients:
1 ½ lbs Baby Carrots
¼ Cup Extra Virgin Olive Oil
¼ Cup Balsamic Vinegar
2 Tbs Honey
2 cloves Fresh Garlic - minced fine
1 tsp Fresh Thyme Leaves - can substitute ½ tsp dried thyme
Kosher Salt to taste
Fresh Ground Black Pepper to taste
Preparation:
- Preheat oven to 400ºF
- Line a large baking sheet with parchment paper
- In a large mixing bowl, whisk together the olive oil, balsamic vinegar, honey, garlic, and thyme leaves until thoroughly combine - Season with salt and pepper to taste
- Add the carrots and mix to thoroughly coat
- Transfer the carrots to the prepared baking sheet trying to keep in one layer and not overcrowded
- Bake in the top third of the oven until fork tender and slightly charred (apx 30-40 minutes)
- Transfer to a serving dish - Lightly drizzle with additional balsamic vinegar, garnish with some finely chopped fresh parsley if desired and serve hot
