1 tsp Fresh Thyme Leaves - can substitute ½ tsp dried thyme
Kosher Salt to taste
Fresh Ground Black Pepper to taste
Preparation:
Preheat oven to 400ºF
Line a large baking sheet with parchment paper
In a large mixing bowl, whisk together the olive oil, balsamic vinegar, honey, garlic, and thyme leaves until thoroughly combine - Season with salt and pepper to taste
Add the carrots and mix to thoroughly coat
Transfer the carrots to the prepared baking sheet trying to keep in one layer and not overcrowded
Bake in the top third of the oven until fork tender and slightly charred (apx 30-40 minutes)
Transfer to a serving dish - Lightly drizzle with additional balsamic vinegar, garnish with some finely chopped fresh parsley if desired and serve hot
